Heston Blumenthal once served this plate to his guests, who had sat down for a meal costing hundreds of dollars. The waiter informs them that they had been served "Orange and Beet Root Jellies" and that one is suggested to start with the orange. The plate is unimpressive, even boring. Perhaps they are a bit disappointed. But as soon the orange jelly hits the tongue, filling it with the intense flavor of beets, most guests can’t help but laugh and be filled with delight.
